Blueberry Buttermilk Pancakes

Ingredients

Serves 4
2 c. Buttermilk
2 c. Unbleached all-purpose flour
2 T. Sugar
2 tsp. Baking powder
1/2 tsp. Baking soda
1/2 tsp. Salt
1 Large egg
3 T. Butter, melted and cooled slightly
1 - 2 tsp. Oil
1 c. Fresh or frozen blueberries or huckleberries, rinsed and dried

Directions for Blueberry Buttermilk Pancakes

Whisk flour, sugar, baking poweder, baking soda and salt in a medium bowl. Whisk the egg and melted butter into the milk until combined.

Make a well in the center of the dry ingredients in the bowl. Pour in the milk mixture and whisk very gently until just combined (a few lumps should remain). Do not mix.

Heat a 12 inch nonstick skillet over medium heat for 3-5 minutes. Add 1 tsp. of oil and bruch to coat bottom of skillet evenly.

Pour 1/4 cup batter onto three spots on the skillet. Sprinkle 1 T. bluberries over each pancake. Cook the pancakes until large bubbles begin to appear, (1 1/2 to 2) minutes. Using and thin, wide spatular, flip the pancakes and cool until golden on second side (1 to 1 1/2 minutes longer).

    Sounds good. I use my George Foreman machine for making pancakes and waffles. When I make a pancake on the stove, it burns!
