Blueberry Frozen Yogurt (Diabetic Friendly)

This is a great recipe to make if you are diabetic or have diabetic family members. The best part, is that you can't even tell that it is good for you.

Serves 4
3/4 cup fresh blueberries
1 orange finely grated rind and orange juice
3 tbsp maple syrup
1 pound 2 ounces plain low fat yogurt

Directions for Blueberry Frozen Yogurt (Diabetic Friendly)

Put the blueberries and orange juice into a food processor or blender and process to a puree. Strain through a nylon strainer into a bowl or pitcher.

Stir the maple syrup and yogurt together in a large mixing bowl and then fold in the fruit puree.

Churn the mixture in an ice-cream machine, following the manufacturer’s directions. Freeze for 5 to 6 hours.
Tip
*If you don’t have an ice-cream machine, place mixture into a freezer proof container, freeze for 2 hours. Place in another bowl and beat until smooth. Return to the freezer and freeze until firm.
