Ingredients

3 Tbsp vegetable oil
2 cups assorted mixed unsalted nuts like pecans, almonds, Brazil nuts, hazel nuts, walnuts, no peanuts
2 Tbsp sugar
1 tsp paprika
1/2 tsp chili powder
1/2 tsp curry powder
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp black pepper
1/4 tsp salt (omit if using salted nuts)

Heat oil in large pan over medium heatStir nuts in hot oil 2 to 3 minutes until browned, be careful, some of the nuts will go from brown to black very quickly.Combine all sugar and spices in small bowl and sprinkle over nuts.Stir to coat evenly while heating another 1 to 2 minutesDrain excess oil in strainer, colander, or wire rack over paper towels.Best if served warm but are still amazing when cooled.Tip
I have made these the last couple Christmas seasons and served to friends and customers at Bristol Brewing in Colorado Springs where I work as a bartender. Obviously the jokes abound about munching on Bob’s nuts.Very easily doubled or tripled etc. I usually make 2 lbs at a time.
