I created this soup today out of sheer desire for something warm and flavorful to eat. This is a low fat vegetarian soup that has 8 herbs and spices to fascinate taste buds. Great for camping or just staying in on winter's cold days.

Ingredients

Serves 14
1 28 oz. can Ro-tel Tomatoes
1 15 oz can stewed tomatoes
5 Bouillon cubes
5 and 1/2 cups Water
1 and 1/2 tsp each Seasonings I: Greek seasoning, celery salt, chili powder, Accent
1 pinch of each Seasonings II: Rosemary, thyme, oregano, parsley
3/4 of 10 oz bag Angel hair cole slaw, uncooked
1 32 oz bag Frozen snap peas mixed vegetable medley
1 cup Frozen, diced onion, green pepper and red pepper combination
1 Bay leaf

Directions for Bold Vegetarian Soup

Pour Ro-tel tomatoes and stewed tomatoes into a 6 quart slow cooker and stir.

Add bouillon to water. Microwave on high for five minutes. Pour bouillon water over tomatoes and stir.

Add Seasonings I and Seasonings II to tomato mixture and stir.

Add snap pea medley, cabbage and onion and pepper combination. Stir. Add bay leaf

Set slow cooker to cook for eight hours. After six hours sample vegetables to make sure they are not too soft.

Remove from heat. Cool soup completely before refrigerating or freezing. Makes 14 one cup servings.
Tip
This soup recipe is spicy. You can modify it by using less chili powder or none at all. And, you can substitute the Ro-tel tomatoes with a 28 ounce can of stewed tomatoes. Any frozen vegetable combination will do.
