Very simple!
Ingredients:
1lb ground beef
1 pkg. taco seasoning
Some diced onion if you like
2 cans beef broth
2 cans water (just fill up the dumped beef broth cans)
1 can kidney beans
1 or two handfuls of frozen corn
1 pkg Ranch Dressing (the powder stuff) (It's the secret ingredient!)
Ok...
Dump your 2 cans beef broth & 2 cans of water in a large pot and heat to boiling, once boiling dump in the pkg of Ranch dressing and wisk it in there until mixed really well.. lower heat to low/med. Add beans and corn and let that all marry while you brown your ground beef.
I usually brown my beef with the diced onion (I buy the packaged frozen diced onion to make it simple). Once browned, add your taco seasoning to the meat according to seasoning directions.
Finally add your beef mixture to your soup mixture and let it heat for about 30 minutes to let all the flavors blend.
Tastes fantastic I promise. You can also turn it into a crockpot meal by preparing ahead, dumping in crockpot and letting it cook on the lowest setting all day. Makes the beef absolutely melt in your mouth.
Serve with warm tortillas or cornbread (I used the packaged cornbread but add parm cheese and frozen corn and a dash of sugar to make it special.)
