Using Leftover Bread for Dessert

Bread pudding recipes are the perfect way to use leftover bread for a dessert. Bread Pudding Recipes, Low Cholesterol Version
6 slices stale wheat bread
2 cups. 2% milk
Eggbeaters equivalent to 2 eggs
3/4 c. brown sugar
1/2 stick butter
2 tbsp. vanilla
1/4 cup. raisins
1 tsp. cinnamon

Preheat oven to 350. Break bread into bite-size pieces in mixing bowl. Add remaining ingredients; then melted butter and mix well. Pour into 8-inch square baking dish. Bake at 350 degrees for 45 minutes. To tell if the pudding is done, insert fork tine to see if it comes out clean.

Bread Pudding Recipes: Fruit Flavored
Tropical Bread Pudding - This one will remind you of pina coladas.
3 eggs
1 small pack cream cheese, softened
1/2 cup brown sugar, packed
3 c. whole wheat bread cubes
8 oz. can crushed pineapple in juice
1 cup. coconut
1/2 cup. milk

Slightly beat the eggs and combine with softened cream cheese, and brown sugar. Stir in bread cubes, undrained pineapple, coconut and milk. Pour into a greased 10 inch baking dish. Bake at 325 degrees for about 30 minutes or until knife comes out clean when inserted near center. 8 servings.

Bread Pudding Recipes for the Microwave
6-8 slices wheat or white bread
3 cup milk
2 tbsp. butter
3 eggs, beaten
1/2 cup sugar
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1/2 cup. raisins

Tear bread into pieces and place in round microwave glass bowl greased with the butter. Heat milk on high for 5 minutes. Add beaten eggs and sugar, salt, cinnamon, vanilla and raisins. Pour this mixture over the bread. Cook on high 8-9 minutes

Bread Pudding Recipes the Old Fashioned Way
1/4 cup raisins
3 slices bread, Whole wheat is a good choice for this recipe
2 eggs, beaten
1 1/2 cup. milk
3/4 tbsp. vanilla
1/2 c. sugar
1/2 tsp. cinnamon

Preheat oven 350 degrees. Butter a 8x8 baking dish so the pudding doesn't stick. Sprinkle half of raisins in the dish. Break bread into small pieces and place in baking dish. Add remaining raisins on top. In large bowl beat eggs, add milk, vanilla cinnamon and sugar. Beat well. Pour over bread. Let stand 10 minutes for wet mixture to soak into bread. Bake 30-35 minutes or until the pudding is set. 4 servings.
