Breakfast Ideas with Beans

Everyone's always looking for different ways to add more fiber to their diet. One food notorious for its high fiber content is beans. Of course, beans aren't normally the first thing you think of when planning meals for breakfast. This is usually because people never think to serve beans with certain foods, such as eggs. Many people also forget that beans can be sweet and are perfect when spread on toast or pancakes. If you're looking for different ways to add beans to your morning meals, you're going to love these ideas.

Peanut Butter Banana Pancakes

Many people don't think of peanut butter as beans, but that's exactly what it is - not a nut. Whether you're making breakfast for your child or yourself, this breakfast is sure to please. Not to mention that this breakfast can be extremely healthy. The trick is to start with whole wheat pancakes and then add natural peanut butter and sliced bananas. Peanut butter is a much healthier way to top your pancakes than syrup. Not to mention it has fiber and protein. You can even purchase low fat peanut butter, if you prefer.

Breakfast Pizzas

Another easy way to use beans at breakfast is in a pizza. Breakfast pizzas are the perfect meal for people that don't care too much for breakfast and for finicky eaters. As with any other pizza, you can add the ingredients you like. For example, you could start with a whole wheat pizza crust and add salsa, shredded cheddar cheese, black beans, peppers, mushrooms, onions and sausage. This is a great option for a Sunday brunch, but can quickly be prepared during the week as well.

Omelets

Omelets are a favorite among many breakfast eaters and is the perfect meal to add beans too. You can choose to add black beans if you want a Mexican style omelet or green beans for a more neutral flavor. This is also a great way to sneak healthy foods into your child's diet.

Peanut Butter Banana Smoothies

If you need something that you can take on the road, smoothies are the perfect option. A smoothie made with natural peanut butter, bananas, fat free vanilla yogurt and ice is a treat that children and adults will love. If you want to add a bit more sweetness, you can also add honey. If you want something really special though, add some mini semi sweet chocolate chips to the blender. You'll get a delicious chocolate flavor in a healthier way.
