Breakfast Pizza - Fast and Easy

People tend to feel that making a breakfast that is not sweet or overly filling is a challenge. Not only is it easy but economical compared to a "power breakfast".

Ingredients

Serves 4
6 Eggs
1 cup Cheese (any variety)
1/2 cup Bell peppers (chopped)
1/2 cup Onion (chopped)
1 cup Hash browns or potatoes o'brien (thawed)
1/2 cup Pre-cooked breakfast meat (chopped, optional)
2 tsp Cooking oil (any variety except pure olive oil)

Creating a crust
On medium heat, add oil to pan and let warm. Add potatoes before oil bubbles.

Add vegetables
This is optional but a good way to get nutrients first thing in the morning. Add the chopped peppers (or more dense veggie of your choice) first and let cook for five minutes before adding onions

Filling Time
Turn on oven to 350 degrees and turn down heat on vegetables as you are not trying to brown them. Beat eggs in large bowl and pour, along with breakfast meat in pan.

Topping
Cook for 15-20 minutes. In the meantime, shred or finely slice cheese. When top of filling is dry, spread cheese generously.

Time to Eat!
Remove from oven and let cool. If a crunchy top is desired, then place in broiler for additional five minutes.
Tip
If using frozen potatoes, you can thaw in refrigerator the night before to ensure they will brown faster.
