Breakfast Recipe for Lactose Intolerant Children

My 9 year old daughter inherited something from her mom that I wouldn't wish on any child: lactose intolerance. For a child, this can inhibit them from eating favorite kid foods such as cereal, ice cream and kiddie yogurts. Here is an oatmeal recipe that my daughter loves because its creamy and fulfilling and won't hurt her belly. And I love it because it's so easy to make; it's a perfect breakfast for school mornings.

Lactose Free Fruity Oatmeal (Serves 2)

2 1/2 Cups of Quaker Oats
3 Cups Vanilla Soy Milk (you can also use Lactaid if you don't want it too sweet)
A pinch of salt
1 tablespoon marshmallow creme (you can find this in the baking aisle of the supermarket)
1 fruit cup (I use peaches, but you can substitute with mixed fruit or pineapple)
1 tablespoon of light butter
Dash of cinnamon (if desired)

Add milk, salt and butter to a medium saucepan and bring to a boil (do not over boil). Turn off stove and immediately add the oats. Mix well. Let sit for about 2 minutes. Add marshmallow creme and fruit. Serve and add dash of cinnamon if desired.

Cooking time: 5-7 minutes
