Bri's Best Vegan Coconut Cake

Are you looking for a delicious dessert that will satisfy even the pickiest diet? My boyfriend's father is a vegan, so I know all about how hard it is to find recipes that will satisfy everyone at the table. I found this recipe on the Food Network, and believe me; this delicious vegan coconut cake will awe your dinner guests, and even put a smile on the face of that favorite vegan in your life.

Ingredients

Cake:

8 ounces silken tofu
1 pound and 5 ounces sugar
2 cups coconut milk
12 ounces coconut flakes
1 cup canola oil
1 pound plus 4 ounces all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder

Icing:

1 pound soy margarine
1 pound powdered sugar, sifted
1 ¼ cup coconut milk

Directions

Preheat your oven to 350 degrees F.

This recipe is really easy. Blend the first 5 ingredients in the cake until the mixture is thick and uniform in texture. Add the last three ingredients in the cake and do the same thing. Pour the batter into 2 9-inch parchment lined cake pans that have been coated with non-stick cooking spray. Bake for 1 hour.

For the icing, mix all the ingredients together until it's incorporated, and spread it over the cake. Now you have a delicious vegan coconut cake that both vegans and non vegans will enjoy!
