Broccoli and Chicken Breast Casserole and Corn Bread

This recipe is for a chicken breast casserole that is bother easy and colorful.

Ingredients:

1 bag frozen broccoli pieces

2 chicken breasts

1 can Cream of Chicken soup

1 can milk

1/4 tsp Curry powder

1 cup shredded Sharp Cheddar Cheese

Steps:

  1. Boil chicken breasts until cooked, cut into 1" cubes
  2. Boil broccoli for 3 minutes, drain
  3. Spread broccoli on the bottom of a 9x9 casserole dish (a larger dish can be used, adjust the recipe accordingly)
  4. Spread chicken on top of broccoli
  5. Mix Cream of Chicken soup, 1 can of milk, and 1/4 tsp curry powder, pour mixture over chicken and broccoli
  6. Sprinkle sharp cheddar cheese over everything
  7. Bake for 1 hour at 350 degrees
Stuffing is a good garnish for this casserole and adds a bread product to the meat and vegetable. Like with all casseroles, this recipe can be altered to suit your needs. If you prefer canned vegetables to frozen, carrots can replace the broccoli. If you'd like to add some crunch to this dish, add bread crumbs to the top of your casserole after a half hour of cooking. Corn Bread is a good way to finish off the meal.

Corn Bread

Ingredients:

1 ¼ Cups All-Purpose Flour

¾ Cup Enriched Corn Meal

¼ Cup Sugar

2 Tsp Salt

1 Cup Skim Milk

¼ Cup Vegetable Oil

1 egg, beaten

Directions:

  1. Mix dry ingredients
  2. Stir in milk, oil, and egg just until dry ingredients are moistened.
  3. Pour mixture into greased 8 or 9 inch baking pan
  4. Bake at 400 degrees for 20-25 minutes
  5. Serve warm
