Broccoli Frittata
6 Eggs
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 cup shredded cheese
1 Onion, finely diced
20 Broccoli Florets
2 Peppers, finely chopped (Should make 1 Cup)
1 tbsp of Vegetable Oil
Oil spray to coat your Skillet
In a large bowl crack your eggs and add in the salt, pepper, and cheese. Whisk, until well blended and then set the bow aside.
The next part we need to make the broccoli tender. You will need the following items:
Microwave Safe Bowl
Water
Pinch of Salt
In a microwave safe bowl, put the broccoli in water and add the pinch of salt. You want to cook it for 2 minutes and then check the tenderness. If they are not still a little rough, cook them for another minute until they are soft. Place to the side once finished.
You will need a skillet that has a heavy bottom. Coat it evenly with the cooking spray, such as Pam. Heat the 1 tbsp of oil and fry the green peppers for a few minutes. Add the onions and fry for another 2 minutes.
Drain the water from the broccoli and add it to the frying pain, stirring well before spreading the mixture. You want to make sure that the mixture coats the bottom of the pan evenly.
Add the egg mixture on top.
Cover and cook for about 20 minutes on the lowest setting until the top is set. Its important to note here that stoves may vary. I had an old electric stove that was terrible and it took hours to cook anything on it. Once the top has set, cut into wedges and serve.
Optional
In regards to the shredded cheese, onions, and peppers, I usually use shredded cheddar cheese, white onions, and yellow peppers but it's really up to the preference of the cook.
You can add to the seasoning mixture (Eggs, Salt, Peppers) things like ketchup and hot sauce. You will need 1 tsp. I do not add anything very often because I am the only person in the family that has taste buds that work properly. In my house you add a little pepper to anything and for the next hour, the three of them are complaining that their mouths are burning. But that is an option for those that like a little flavor.
