Broccoli Rabe with Sauteed Garlic

Ingredients

Serves 4
1 lb Broccoli Rabe - one large bunch (approximately 1 lb)
2 cups Chicken Broth or Stock - homemade or packaged
12 Fresh Peeled Garlic Cloves - large
8 tbsp Extra-Virgin Olive Oil
2 tbsp Black Pepper - fresh coarsely ground
1 tsp Sea Salt
1 tsp Crushed Red Pepper Flakes (optional)

Directions for Broccoli Rabe with Sauteed Garlic

Prepare Broccoli Rabe
Wash broccoli rabe in cold water. Trim coarse ends and slice lengthwise on a bias into 1 inch pieces.

Sautee Garlic
Slice garlic cloves thinly and sautee in 4 tablespoons of extra-virgin olive oil until tender and a light golden brown in color. Remove pan from heat and set aside on a warm burner.

Cook Broccoli Rabe
Add salt and pepper to chicken stock or broth (add crushed pepper if you prefer a hotter taste). Bring to boil in a medium size pot. Reduce heat to simmer. Add broccoli rabe, cover pot and cook for 10 minutes. Drain, drizzle in remaining olive oil and toss with sauteed garlic.

Serve As a Vegetable or Toss with Cooked Pasta
Serve as a side with any meat or fish dish. It's also delicious when added to your favorite cooked pasta such as linguine, rigatoni, or penne.
Tip
Some chicken stocks or broths are saltier than others, so be careful how much salt you add. If you're a strict vegetarian, substitute vegetable broth for chicken stock.
