Broccoli-Corn Casserole, an Easy and Fast Thanksgiving Recipe

This is a recipe that my great-grandmother used to make, and has been passed down through the line. It's so easy to make that anyone can make it, even kids! It doesn't require any pre-cooking or heating things up and cooking parts at a time. It only takes about 15 minutes to prepare, and is simply based on the idea of layering. This recipe is called Broccoli-Corn Casserole, and is so tasty that your kids will actually want to eat their broccoli! The recipe is as follows:

1 pkg. frozen broccoli, cooked (bottom layer)

1 can cream corn (next layer)

2 beaten eggs

½ c. margarine or butter (1 stick) melted

1 slice bread, crumbled

¼ c. cornflake crumbs (topping)

Begin by putting frozen broccoli in microwave-safe bowl and follow heating instructions on package. Spread cooked broccoli over bottom of casserole dish. Pour can of cream corn over broccoli and spread out evenly with spoon. Beat together two eggs in separate bowl and pour on top of corn and broccoli. Melt stick of butter in microwave and add to the top of casserole, spreading egg and butter with spoon if necessary to cover vegetables. Rip apart a slice of sandwich bread into small pieces, and scatter around the top. Crush cornflakes to create a crust and pour evenly over casserole. Bake at 350 degrees for 45 minutes. Remove, allow to cool a few minutes, and then enjoy!! This Broccoli-Corn Casserole is sure to be a hit, and doesn't take all day to make, so you have time to make the other 20 dishes you planned on serving.
