BUCKWHEAT PANCAKE MIX

In a large mixing bowl, combine:

12 cups white flour
2 pounds Buckwheat flour (6 to 6½ cups)
1½ cup sugar
2 Tablespoon salt
½ cup baking powder
4 cup dry milk

This mixture should be refrigerated or frozen in an airtight container.

BUCKWHEAT PANCAKES (Makes 6 six-inch pancakes.):

Mix:

3 beaten eggs
2 Tablespoons oil
1 cup water

Add and mix to:

2 cups Buckwheat pancake mix.
NOTE: if mixture becomes thick, add milk to thin.

Drop by tablespoons (1/8 cup for 3" pancakes) into hot greased griddle (350 degrees *). Turn pancakes when bubbles appear on surface and cook 1 minute more.
