Buffalo Chicken Wings to Spice Up Your Football Parties when Alabama Defends Their College Football National Championship.

This is a Great Finger Food for Both Home and a Tailgate.

Since they first gained popularity in the 1990s nationwide Buffalo wings have been a mainstay of the football tail gates and parties. Like most people I used to just buy or make regular hot wings that were deep fried and then smothered with hot sauce. As I have gotten older I figured maybe I would find a way to enjoy Buffalo wings without the added fat of the deep frying. Here is how I like to make chicken wings.

These wings will not be fried but put on a barbeque grill and cooked that way after simmering in beer.

Here are the things that you will need for the wings themselves and I will cover sauce options a little later.

  1. four lbs of chicken wings cut into two sections
  2. one onion minced
  3. ½ cup garlic powder
  4. 2 cup of teriyaki sauce
  5. 6 cans of beer ( I use Coors light of Yuengling)

The wings will be marinated for at least four hours prior to cooking. The next thing you do is wash your wings off and insure that they are separated. You want to take a slow cooker or large pot (depending on how much size you need) and put the beer and teriyaki in the pot and mix in the onion Next you want to simmer the wings in the mixture of beer, teriyaki, onion, and garlic powder. I often let that mixture sit for about a half hour to an hour and then put the wings in there. You want to slowly simmer them for at least 4 hours and stir often to insure that the flavor disperses throughout the wings. After the wings are done you want to take them and put them on the barbeque grill. I usually cook them on low heat for about five minutes to seven minutes per side. It can very though depending on the size of the wings.

After they are done you are ready to put your spices on them. I only make two kinds of wings. One is hot wings and the other is BBQ (sometimes spicy BBQ). If you make hot wings I would highly advise you to remove them from the heat and then use your favorite hot sauce to flavor the wings. What I like to do is mix 3 parts hot sauce with Sriracha hot chili sauce (warning this is VERY HOTT). You mix them together and toss your wings in this mixture with a large bowl. You can adjust the amounts of sauce depending on your taste. I don't believe the flavor is properly brought out when hot wings are put on the grill with sauce on them unless you are reheating them.

If you are making barbeque hot wings I would advise actually putting the sauce on and then cooking for one minute on each side. Since this is not a sauce recipe I will tell you to just keep it simple and use your favorite BBQ sauce and splash it on as they are grilling. If you want them a bit spicy what I like to do is mix hot sauce or (most often for me personally) some Sriracha Hot Sauce into the barbeque sauce before applying it.

When I serve them I sit them up on a platter and always put celery out with them. Sometimes I will put ranch or blue cheese dressing out with them. Some of my guests like them but not many. I advise serving with an ice cold beverage and make sure that you have plenty of drinks available in the event you use the Sriracha Hot Sauce.
