Bugambilias Provides Authentic Mexican and Salvadoran Food in Fairfield, CA

Not Crowded, but Serves Quality Food

Recently on a weekday afternoon two of my coworkers and I stumbled upon Bugambilias which is located at 739 Texas Street in Fairfield, California. The restaurant was not crowded, which was a surprise after I discovered the quality of the food. This is not a restaurant that serves prefab mexican food. Too often we have become familiar with mexican food that is just fried, and quite often over-fried. The difference between Bugambilias and other restaurants that claim to be Mexican or Salvadoran is that the food at Bugambilias is authentic and not just deep fried tortillas filled with meat.

When we entered Bugambilias in Fairfield, CA we found there was only one other party in the restaurant. This was at noon on a weekday afternoon which tends to be peak lunch time. I, along with the others in my group, was a little concerned about this and the fact that it took a few minutes for the waitress to come to our table to greet us and take our drink orders. After taking those orders though, things improved quickly. Some fresh tortilla chips that had been baked instead of deep fried arrived, they were nice and crispy without being greasy due to being baked. The salsa they arrived with was freshly made and the green and red colors complimented each other perfectly. It was not a spicy salsa, but had a strong and pleasant flavor.

The menu does not include a lot of selections, as it concentrates on what the owner can ensure is prepared authentically and prepared well at Bugambilias in Fairfield, CA. I and one of my coworkers ordered the quesadillas. I ordered mine with chicken and my coworker ordered their quesadilla with just cheese. Our other coworker ordered flautas with chicken and refried beans.

When our meals arrived they included salsa and sour cream on the side. The thing that impressed me with the food from Bugambilias was that it wasn't fried to death. Instead the tortillas for the quesadillas and the flautas were both grilled. Too often these are grilled to the point of killing the flavor. My quesadilla was filled with shredded chicken and cheese as well. When I say "filled", I mean there was plenty of meat in it. By shredding the chicken the meat was present in every bit of the quesadilla. It wasn't like some quesadillas there there is filling in the middle and nothing towards the ends and sides of the quesadilla. Every bite had chicken and cheese in it. My other coworker with the cheese quesadilla had plenty of cheese in his quesadilla as well.

The flautas were very interesting being prepared grilled instead of deep fried. It appeared that my other coworker enjoyed her meal as well. With being grilled they were very similar in texture to the quesadillas and also filled with meat and cheese. The food served at Bugambilias in Fairfield, California proves that not all Mexican and Salvadoran food has to be deep fried, the grilled selections are very good as well.
