Now, there's another reason to dine at Bulow's Bistro. A new chef is on the scene and he's introduced a new menu for Bulow's Bistro. Welcome Chef Charlie Bartosek to Ouray, Colorado where he will oversee Bulow's Bistro in the Beaumont Hotel.
Chef Charlie was previously at the Hilton Hotel in Colorado Springs. I spoke with Chef Charlie and he told me he was very excited to be in Ouray and at the Beaumont Hotel. We are just as excited to have him here and I think you'll agree once you see his new menu.
The new menu at Bulow's Bistro has some great choices and Chef Charlie is bringing back a small plates menu which is appetizers and is offering nightly specials for locals. Specials for the locals is always a hit in this small town.
Since the menu has only been out for two weeks, I have not had the pleasure of sampling many of the items...but I will and I will have a review of Bulow's Bistro in a few months.

Small Plates - Appetizers
Italian Spare Ribs, Escargot, Balsamic Roasted Portobello, Sweet Thai Lettuce Wraps, or Aioli Fritters are some of the choices.
Salads
More salads are being offered and there's a Wedge salad, Chicken Caesar, and a Southwest Waldorf which sounds intriguing. There's also a Garden and Side salad on the menu.
Sandwiches
A couple of interesting sandwiches such as a Shrimp BLT and an Italian Pesto are on the new menu. There's also a Portobello Burger, Chicken Parmesan, and a Bistro Burger. I'll be visiting Bulow's Bistro soon to try that Shrimp BLT. My curiousity is aroused with that new item.
Bulow's Bistro Specialties
Every chef has their favorite dishes that they enjoy making and Chef Charlie is no different; except, he has a lot of them and they all sound very good. Chef Charlie's specialties are Shrimp Scampi, Red Wine Braised Chicken, Beef Tips, Colorado Rack of Lamb, Pasta Primavera, Seasonal Risotto,
Rib Eye, and Fish of the Day. I, for one, am very glad to see fish on the menu.
Desserts
If I had my way, I'd eat dessert first. That's just the way I feel about desserts. Bulow's Bistro now has Cheesecake, Crème Brule é , Chocolate Mousse, and Beignets. Hmmm...not sure which one I'll dive into first.
Bulow's Bistro also offers a children's menu with Chicken Fingers, Grilled Cheese, and Mac 'n' Cheese.
Are you hungry yet? Bulow's Bistro is located at the Beaumont Hotel on Main Street in Ouray. They are currently open Thursday, Friday, and Saturday serving lunch at 11am and serving dinner at 5pm. Bulow's Bistro will announce their summer hours in a few months. Bon Appetit!
