I was first introduced to the Homemade Gourmet food products when I started receiving them a few years ago as a Christmas gift, from a relative.

My favorite of the Homemade Gourmet food products is the Mini Pecan Pie Muffin Mix.

The Mini Pecan Pie Muffin Mix comes in a see-through plastic bag and inside the plastic bag amidst the ingredients is a plastic bag of pecans - a very generous amount. Along with the pecans, the other ingredients already mixed in the bag are: brown sugar (sugar, cane syrup), and enriched bleached wheat flour (niacin, iron (reduced), thiamine mononitrate, riboflavin, folic acid, malted barley flour).

The few other ingredients you have to add are:
2 eggs, beaten
1 stick of butter, melted
If you substitute margarine for butter, the label says the muffins come more cake-like in texture instead of having their intended caramelized butter flavor and texture, but I didn't find that at all.

Note: For allergies this mini pecan pie muffin mix does contain wheat and pecan ingredients.

The very easy to follow directions to make the mini pecan pie muffins are just these 3 steps:
1. Preheat the oven to 350 degrees. Stir all ingredients together in a mixing bowl until blended;
2. Spray mini muffin tins with flour based cooking spray. Fill tins half full and bake for 12 minutes; and
3. Remove muffins from the oven and immediately remove from pan onto a cooling rack or counter top.

Just one bag of ingredients makes 36 mini pecan pie muffins. Can you believe it????

After baking, the mini pecan pie muffins taste absolutely delicious. There is a generous amount of pecans in each muffin and they have a delicious sweet - but not too sweet, caramelized flavor and texture. Each muffin is very moist and tasty. They taste just like old-fashion pecan pie. They are very neat & convenient to serve.

Nutritional Facts for a serving size, which is 2 mini muffins are:
a. 140 calories;
b. Only 20 of the 80 calories is from fat - 8g of total fat;
c. 3g saturated fat, trans fat, 35mg cholesterol, 50mg sodium, 15g of total carbohydrates;
d. 3g dietary fiber, 11g of sugars and 2g protein; and
e. 2% iron and 2% calcium.

Other Variations of uses for the Homemade Gourmet Mini Pecan Pie Muffin Mix are:
1. Make 12 regular size muffins instead. Bake 20-25 minutes instead of the 12 minutes for the minis.
2. Make pecan pie bars. Spray an 8X8 pan with flour based cooking spray and pour the batter into the pan. Bake 20 minutes. Cool completely before cutting into small bars.
High altitude Instructions: Add 1/3 cup of flour and increase baking time.
