Cabbage and Pepper Slaw with Celery Seed

Easy Salad Using Celery Seed and Bell Peppers for Flavor

There are countless recipes for coleslaw and vegetable slaws out there using cabbage and a sweetened dressing for flavor. This one is similar, but with a few notable exceptions. Red and green peppers are diced and added to the vegetable mixture, and whole celery seed is added to the dressing. The dressing is heated then cooled to room temperature and poured over the salad. Serve immediately, or let the dressing finish cooling and add, chilling the salad before serving.

Once the dressing has had a chance to steep in the warm liquid, the flavors of the celery seed will help to perfume the slaw.

Cabbage and Pepper Slaw with Celery Seed

Ingredients:
1 medium head of cabbage
1/2 medium red bell pepper
1/2 medium green bell pepper
1 medium onion
Celery Seed Sweet Slaw Dressing (see recipe below)

Procedure:

Shred the head of cabbage and place in a large mixing bowl. Dice the red and green bell peppers and place on top of the shredded cabbage. Take the medium onion and dice fine; add to the vegetables.

Pour the prepared dressing over the top of the vegetables. Serve as is or chill before serving.

Celery Seed Sweet Slaw Dressing

Ingredients:
1 cup white vinegar
1 1/2 to 2 cups sugar
1 cup corn oil
2 Tbsp whole celery seed
2 tsp salt

Procedure:
In a small saucepan, bring the vinegar, sugar, corn oil, whole celery seed and the salt to a quick boil, stirring occasionally. Remove from the heat and allow the mixture to cool to warm. Use for a room temperature slaw salad, or let cool completely to make a chilled salad.
