Caldo De Res: Mexican Beef Soup

Growing up Mexican- American in the U.S I have learned to survive off of Mexican food that my parents and family members make every week. And one of my favorite dishes is called Caldo de Res (beef soup) and this to me is a good lunch meal for me. In this article I will discuss what Caldo de Res is and what the ingredients are in this soup.

Caldo de Res is a real authentic Mexican dish and is eaten about every week by Mexican families in the United States and in Mexico. Caldo de Res is basically a beef soup that is a good source of protein, because the main ingredient is beef and lots of beef is added in this dish. Caldo de Res is usually eaten for casual lunches, and it's not a fancy food, but it's real Mexican food. Many people make Caldo de Res differently, but it all depends on what part of Mexico you are from. In this next paragraph I will explain the way we make Caldo de Res in Guanajuato, Mexico.

Caldo de Res is sold in a lot of restaurant throughout Mexico for tourists as well as the locals. I don't usually buy it at restaurants but my family usually cooks it at home. The main ingredients in Caldo de Res are very simple, so take a pen and paper and get ready to write. The main ingredient is mainly beef and whole cuts of beef in two inch cuts. The beef is cooked in water until fully done, then the vegetables are added in with the cooked beef and juice. The vegetables can be potatoes, cabbage, onions, cilantro, salt, carrots, and the special touch of cooking this dish with patience. The good thing about Caldo de Res is that there is very little spices required, you can add black pepper, but salt is really all that goes in the soup when cooking it. The way this soup is eaten is with corn tortillas. The corn tortillas give the Caldo de Res the much needed taste to taste like a real meal. Since tortillas are the staple food of Mexico, it is required you eat corn tortillas with Caldo de Res. The corn tortillas that are homemade are the best in flavor.

    I love this dish. My grandma makes it every Sunday. She says that you always make caldo de res with arroz as a side. She is from Monterrey and now lives in the Rio Grande Valley. This is the closest description to the way I've know it to be made.
