Camping Trips - A Guide for Your Mornings

Mimi Bleu
Good Morning! Whenever I go camping I seem to wake up earlier then usual. Perhaps it's the sun beating down on the tenting of the camper, or the birds chirping or the smell of campfire, whatever it is it is truly invigorating and it makes me want to move. I start the day with a nice walk. We frequently camp at a campground near the Atlantic Ocean, so a beach walk is a great way to get some exercise and relax at the same time.

I head out on my walk with a bottle of water, a granola bar and my music player. Sometimes I stop and do some basic yoga stretches along the way. The beach is often empty and it's so peaceful to begin the day in this manner. After walking for about an hour, I get hungry and head back to camp for a big breakfast. Below are some recipes for you to enjoy.

Banana Yogurt Treat:
1 Banana sliced length wise
1 6 - 8 oz container of strawberry yogurt
4 fresh strawberries cut up small
granola cereal with raisins

On each banana slice, spread half a container of the yogurt, and some cut-up strawberries, add a handful of granola cereal. Here you have a high energy breakfast snack for 2 that is simply to make and delicious to eat.

Homefries camping style
4 cans of sliced white potatoes
half yellow onion diced
half yellow pepper diced
half red pepper diced
shredded cheddar cheese

Preheat the griddle portion of your grill and spray with cooking spray
Add the onions and peppers, cook for 10 minutes of med low heat
add the potatoes and saute along with the onions and peppers until done
add the cheddar cheese after turning the heat off and allow it to melt
serve with salt and pepper to your liking and ketchup too. You can save the other half of the onion and peppers in a plastic bag in the refrigerator or your cooler to use for an evening dinner of sausage and peppers.

I'll be back along with lunch and dinner trips as well as packing tips and essentials no camper should leave home with out! Enjoy and Happy Camping!
