Canned food is safe and full of nutritional values. You should not have any doubt using canned food in your home or when you are on a trip outside. The idea of canning the food came from necessity, when people were not aware of different ingredients in the food and their nutritional values.

It was in early 19th century that one Frenchman, a confectioner by profession presented food in glass bottles, which could be used some days later. Without knowing the technicalities of this particular activity, he was able to preserve food including meat, fruits and vegetables by boiling and sealing the bottle. This was further improved by an Englishman, who introduced metal cans in place of glass bottles.

Louis Pasteur, the world famous scientist and Nobel laureate explained that microbes helped food to decompose and the presence of heat killed microbes. Since microbes lived with oxygen, the absence of air or oxygen did not permit microbe to grow once again. The chance of decomposition of canned food was not possible.

Many elements like enzymes, oxidation, and dehydration including microbes contribute to the decomposition of food. Canning is the practical means of safeguarding food decay. Canning also helps the food to retain its value of proteins, carbohydrates and fats including Vitamin A. Heating of food specially vegetables for canning destroys the value of Vitamin C in the presence of air. To retain the effect of Vitamin C, the air is drawn out of cans before filling and sealing them. Vitamin B2 is not affected in canning and Vitamin B1 is slightly affected if the food is acidic in nature.

In short, canning is a very useful process and most of the food retains the food value in it for a reasonable period of time. It is scientifically proved that canned vegetables have more food value than fresh vegetables which are carelessly dumped in a stock for days. Usually, the fresh food is canned in raw stage, which has to be cooked later on. A renowned company will properly wash the food to make it clean for safe eating. It is advised to use canned food from reputed companies who guarantee properly cleaned raw food for eating. In case of any contamination, the canning company should be held responsible instead of the food or the canning technique.

It is mandatory to check the batch number of every canned food that you may purchase. Examine the can before opening and check for any change in the shape of the can. If there is any, you should immediately return the same to the store from where you purchased the stock and get the replacement. If you mark any sound from the can on opening just as if gas is coming out of it, discard the food instantly. Notify the producer of the food about the batch number of the canned food and register a complaint. Reputed manufacturers will withdraw all the remaining stock of the same batch from the market for retaining their reputation.

In summation, canned foods are safe and provide nutrients equally well. Check the label to ascertain the efficacy of ingredients which you find safe and good for your health. You can be safe with canned food of reputed companies.
