Canning Green and Yellow Beans Together! Raw Packed

Step-by-Step How to Can Beans

Together, yellow beans and green beans are pleasing to the eye and the palate. Did you know that you can put green beans and yellow beans together in the canning process? Sit back with a cup of coffee and we'll go through, step-by-step, how to can green and yellow beans. It's easy!

(This is for Pressure Canning only. Check with your Extension Office for your area.)

Utensils You Will Need:

- Pressure Canner (NOT water bather) I use a Mirro
- Knife
- Clean towels
- Jars (washed, sterilized, checked for chips/cracks)
- Lids and rings
- Small pot (for heating lids)
- Salt (optional)
- Large pot for hot water
- Pressure Canner book

Step-by-Step Instructions for canning beans.

Pick firm green and yellow beans. Snap the ends off and snap the beans in approx. 1-1 ½ pieces. Run a sink full of water and throw your beans in. Stir the beans around and wash them off. Check for pieces that are brown or damaged in some way. Do NOT use moldy or damaged green or yellow beans!

Now is a good time to make sure you have your jars ready. You should be using clean jars and rings. Also, fill a large pot with water. You will bring this to a boil and it will cover the green and yellow beans in the jar. Put a small amount of water in your small pot. This is to "heat" up your lids before you put them on your jars. You don't have to boil them, just make sure they are hot.

Make sure to mix the green and yellow beans together. Usually I have more green than yellow, but it really doesn't matter how much you have of each. Scoop up the beans and let them drain in a colander for a bit. Now fill those jars with a mix of green and yellow beans. Push the beans down with your fingers so you have a good jar full. (The beans will shrink a bit during processing.) Now CAREFULLY fill the jar with boiling water. (YOU SHOULD LEAVE ½ inch space at top.) Take your knife and GENTLY go between the jar and beans. You are getting air bubbles out. Go all the way around the jar. Wipe the jar mouth with a dry towel and put lid and ring on. The ring should be snug but not tight.

Get out your pressure canner manual. It shows times using your canner. Pints will be different than quarts. It will also tell you how much water to add to your pressure canner before processing. It's important to use cold water for this, not hot water. Whether you have canned for years or this is your first time, read through the do's and don'ts in your pressure canner manual. Follow the instructions for your canner.

Tips for Canning Success:

1. Fresh, firm veggies.

2. Pack the beans snuggly in jars.

3. Check for cracked or chipped jars.

4. Wipe jar mouth before adding lid and ring.

5. Get air bubbles out.

Follow instructions for your altitude. Call your Extension Service for information!

When you can vegetables like green and yellow beans, you will notice that they are a duller, more faded color after processing. This is normal.

Now go start canning your green AND yellow beans together! My family actually prefer the mixed beans, maybe yours will too!

    What expert advice here. I know that beans are more and more recommended as adding to a balanced diet. Your advice makes it easy even for a Mr.-Call-991-in-kitchen man like me! LOL
