Anyone who wishes to taste authentic Carribean cuisine should really get this book. Great photographs of the actual dishes are richly spread in the book. The recipes are excellent and the novice cook will find it easy to follow. You don't need exotic ingredients to prepare the recipes so you can get the necessary stuff by simply visiting to your local grocery store. The only caveat is that this book has some British lingo in it so you may often use Google to understand what they mean.

Caribbean Cookbook (ISBN-10: 9766370052)
Rita G. Springer filled this book with loads of mouth-watering exotic Carribean recipes. It was first published in the 1970s so you can say this one is a classic. Many of the original editions have been handed down from mother to daughter, father to son, uncle to nephew, aunt to niece and so forth (I'm sure you get the idea). People treat it like a heirloom because it's that good. The recipes in the book are real Carribean dishes and not just "Carribean-ish". If you only want to buy just one cookbook this is the one you should get.

In the Land of Misfits, Pirates and Cooks (ISBN-10: 0615297781)
If you consider yourself as an advance cook you might want to try the recipes in this book. Michael Bennett, the author, is an excellent chef and he has produced many interesting Carribean style cuisines. In this book Michael shows you many unique and interesting cooking methods and ingredients. If you love to experiment with new stuff you would love this book. Even though this book is aimed at the more advance cook that doesn't mean the basic ingredients will be hard to find. On the contrary you can find most of the ingredients in any grocery store. The recipes are divided into appetizers, sauces, spices, salads, seafood, veggies, poultry and meats. All of them are simply wonderful.
