Casserole Dishes Make for a Warm Meal

These Are Great Dinners Using Meat, Poultry Seafood or Vegetables

Chicken Chow Mein Casserole

3 cups chicken cut in 1" cubes

1 large can chow mein noodles

2 cups chopped celery

½ slivered almonds

2 tablespoons soy sauce

1 teaspoon ground pepper

1 tablespoon butter

2 cup chicken broth

Place half of chow mein noodles in casserole dish. Saute onions and celery in butter. Add 2 cups of chicken broth, ½ almonds. Then put in casserole dish and then remaining noodles. Put remaining almonds on top and heat in over at 350 degrees Fahrenheit for 30 minutes.

Mexicano Casserole

2 cans refried beans

2 cans chili (without beans)

1 onion, diced

2 lbs ground beef

1 green pepper, diced

2 teaspoons garlic

½ lbs Mexican cheese

1, 12 oz package of corn chips

In saucepan cook meat, onion, pepper and garlic. In a large casserole dish out refried beans, chili and meat mixture. Then layer cheese and corn chips on top. Bake at 350 degrees for 20-25 minutes.

Vegetable Au Gratin

1/3 cup rice

2 tablespoons butter

1 onion, chopped

1 tablespoon garlic

1 carrot, diced

1 zucchini, sliced

1 baby corn cobs

2 tablespoons sunflower seeds

1 cup grated mozzarella

2 tablespoons bread crumbs

Salt and pepper to taste

Cook rice. Heat butter with onion in saucepan. Add garlic, carrots, zucchini and corn cobs. Cook 5 minutes. Mix in rice and sunflower seeds. Stir in half mozzarella and salt and pepper. Spoon in ungreased pan and top with bread crumbs and remaining cheese, Cook at 350 degrees Fahrenheit for 20-30 minutes. Great for a vegetarian.

Hamburger Casserole

1 lbs hamburger

1 teaspoon minced onion

Salt and pepper to taste

1 package (10 oz) frozen mixed vegetables

1 can (16 oz) cheddar cheese soup

1 package (16 oz) frozen shredded potato rounds

Preheat oven to 375 degrees Fahrenheit. Mix beef, onion, salt, pepper in 2 quart casserole dish. Arrange vegetables on top. Pour cheese soup over veggies and cover with potato rounds. Cook one hour.

Sausage Ravioli Casserole

16 oz ravioli

8 oz Tomato sauce

4 oz mushrooms

1 green pepper, diced

6 oz shredded mozzarella

8 oz cooked brown and serve sausage

Heat oven to 350 degrees Fahrenheit. Mix mushrooms, ravioli and tomato sauce.

In casserole dish, mix raviolio mixture, pepper in cheese in layers. Put sausage on top and cook about 45 minutes.

Chicken & Pasta Casserole

12 oz rotini pasta

18 oz cream of mushroom soup

2 eggs

¾ cup mayonnaise

1 tablespoon Dijon mustard

1 ½ cp shredded cheddar cheese

2 lbs skinless chicken breast (boneless)

Salt and pepper to taste

16 oz bag frozen broccoli

½ cup bread crumbs

Preheat oven to 350 degrees Fahrenheit. Cook pasta and drain.

Mix soup, eggs, mayonnaise, mustard and half the cheese in a bowl. Stir fry chicken for 2-3 minutes and add salt and pepper to taste.

Add mixture, broccoli and soup mixture to pasta and mix. Put in casserole dish. Top with bread crumbs and cook about 30 minutes.

Lobster Casserole for a dinner party

½ cup butter

1 cup flour

Teaspoon salt

8 cups milk

4 cups cheddar cheese

5 cups of lobster

½ cup ripe olives

8 oz mushrooms

8 hard boiled eggs

3 cups packages biscuit mix

Melt butter in large saucepan. Stir in flour and salt until smooth. Add 7 cups of milk and blend. Stir in 2 cups of cheese. Add lobster, olives, mushrooms and eggs. Spoon into casserole dish.
Add remaining milk to biscuit mix Roll to ¼" thick. Cover with remaining cheese. Cover lobster with mixture and cook at 435 degrees Fahrenheit for 15 minutes.

Tuna Casserole

2 cans tuna (7-8 oz)

1 1/2 cups milk

6 oz peas

1 can (8 oz) cream of mushroom soup

½ cup bread crumbs

Salt and pepper to taste

Mix tuna, milk, peas and soup in mixing bowl. Put in casserole dish. Add salt and pepper and top with bread crumbs. Cook 20-30 minutes.
