Catfish Fajitas

Always a favorite in my house. When I was young my baby sitter was Cajun and used to serve me catfish when my parents were out. Over the years I have played around with the fish and I found this to be the most exciting way to serve the fish.

First grab flour tortillas and place them to the side. Take green peppers, and onions and chop them up into small pieces. You want them to be about the size of a dime so that it has substance in the fajita. Before cooking you are going to want to cut up the catfish into smaller pieces about the size of a lighter.

Season the catfish with a little dab of chili powder, salt, pepper, and a pinch of sea salt if you have it around. Take a skillet and place small amount of olive oil in the pan. Place the catfish on the skillet and remember to keep flipping. The fish will cook quickly. Once the fish is about done you will place the onions and the peppers on the skillet.

While the vegetables are mixing in with the fish place the tortillas in the microwave in between two wet paper towels. Microwave for about 30 seconds to warm them up, if they do not come out hot place back in the microwave for another 15 seconds.

Once that is done take the tortillas and place them on a place and use a serving dish for the fish and vegetables. Also serve with your favorite toppings. My family loves to add salsa and sour cream. Some people will recommend using guacamole also.

Remember to season the fish to your liking catfish is great that it takes the flavor of the seasoning very well. This is a simple and easy meal that the whole family will enjoy.
