Inner Tubing - With it's beautiful waterways, Catskill Park is a great place to take your family to go tubing. FS Tube rentals (http://www.fstuberental.com/) offers rentals and a trip down Esopus Creek that lasts an hour and 45 minutes where you can observe the beauty of the Catskills scenery as you gentle float down the waterway.
Hiking - Catskill Park has breathtaking hiking trails. Mount Tremper Trail is a trail that is open to the public and you will find a fire tower at the summit. At 2,740 feet, it passes a Blue Stone quarry, and the round trip is approximately three miles. It is of moderate difficulty and dogs are allowed, so bring Fido along for the fun!
If you are looking for a more challenging trail, check out Mount Hunter. It is the second highest Catskill Peak at 4040 feet, and is used as a forest fire observatory at the summit.
Camping - If you are planning on roughing it or taking your RV, then you will definitely want to consider Sleepy Hollow Farm. It is located near Oshkosh New York and boasts absolutely stunning camp sites. It is comprised of 18 acres on a former farm with oak and hickory trees all around. There are electric and water hookups for Recreation Vehicles as well as shower facilities available.
Also at Sleepy Hollow Farm are cabins and other accommodations if you don't want to sleep under the stars.

You may also want to take a look at the Catskill Adventure Resort. It is geared more towards families. In addition to RV sites, tent sites, they offer accommodations. There is access to showers, restrooms, and laundry services. On Saturdays and Sundays, a breakfast buffet is offered. There is also a teen lounge with video games if your kids don't exactly appreciate the great outdoors. Here are well, dogs are welcome, as long as they are well behaved and on a leash.

Museums - Are you a Railroad Enthusiast? Check out the Empire State Railway Museum (http://www.esrm.com). Depicting the Upper New York State Railway system from 1800-1940 as they delivered dairy, lumber and other building materials, and farm products to NYC, and brought passengers to the grand hotels and mansions of the Catskill area (many of the beautiful mansions in the Catskill area were only accessible by railway due to the rocky conditions of the area). Check out the rail cars that are being restored and are on display.
