One bunch of cauliflower ( small )
2 cans of minced clams 61/2 oz. (Doxsee) or whatever name you prefer
1 tbs. chopped parsley
3 cloves of garlic (chopped)
1/4 cup of oil
salt and pepper to taste
Break off flowers of cauliflower and boil in salted water for about 10 to 15 minutes. Do not over cook the cauliflower, it must be firm. When the cauliflower is finished cooking, drain and save 2 cups of the water from the pot you just cooked the cauliflower in. Set aside the water. Put the cauliflower back in the pot you cooked it in. While the cauliflower is cooking in a separate frying pan put the oil and garlic. Use a low heat. Do not brown the garlic. This should take about 10 minutes. After about 10 minutes add the clams and water that you set aside to the oil. Now pour the clam mixture over the cauliflower and cook on low to medium heat till cauliflower is tender.
Note: for a dryer dish add one cup of the water, for a more juicy dish add the 2 cups of water.
Takes approximately 30 minutes
Serves approximately 2 -3 people
