Cauliflower Side Substitutes

"Rice", "Mashed Potatoes", & Chicken and "Rice" Soup

Cauliflower can be made to substitute a variety of foods if you are on a restricted diet. It is low in carbs as well as starch, and is healthier for you than many of the other common side dishes.

To substitute rice you can make cauliflower "rice". Take a head of fresh cauliflower, cut off the stems (discard stems & leaves), and shred through a cheese grater. Place the cauliflower shreddings in a microwave safe container. Do not add water, it has enough of its own natural moisture. Microwave covered on high for about 4-1/2 to 5 minutes. Add butter, salt, pepper and soy sauce to taste and enjoy a great rice substitute. Serve with your main dish or meat or put in chicken broth for a chicken and "rice" soup (must be eaten immediately or it will get mushy).

To substitute mashed potatoes; Take a head (or two for a larger crowd) of cauliflower. Cut off stems (discard stems & leaves). Cut into large chunks and place in a microwave safe container. Do not add water, it has enough of its own natural moisture. Microwave covered on high for about 4-1/2 to 5 minutes. Or steam on the stove in a fold out steamer. Add butter, salt, pepper and milk (or ½ and ½) and mash until you reach the desired consistency. Serve with chicken or beef as a nice alternative to waist widening mashed potatoes. This is a much lower starch version and I can even enjoy it on a P.C.O.S. Diet (Polycystic Ovary Syndrome).

Cauliflower takes seasonings well and can be made into a makeshift stuffing, or covered in melted cheese for a warm and satisfying (although not as healthy) side. Being on a highly restrictive diet is hard, but being able to mimic some classic comfort foods really helps mentally and leaves you feeling satisfied instead of deprived. The two sides listed above are inexpensive and easy to make; fewer than 10 minutes (including prep time). This will help you watch your waistline, while still enjoying your food.
