Quick, Easy Vegan Meal Entices Meat Eaters

Quick and easy dinners doesn't have to be either unhealthy or tasteless. The Cedarlane Eggplant Parmesan with Roasted Vegetables and Sundried Tomato Sauce is a good choice for vegetarians that wants a quick dinner that is totally healthy. Although it is an ideal vegetarian meal, it is a flavorful meal that anyone will want to try.

The ingredient list for the Cedarlane Eggplant Parmesan is as almost pure as the clear morning dew. Organic tomatoes and organic tomato puree, organic zucchini, organic bell pepper, organic red bell pepper is natural language everyone understands. The list also contains a word many non-vegans doesn't recognize- rennetless- as in rennetless mozzarella cheese, rennetless ricotta cheese, rennetless parmesan cheese. Rennet is a bacteria that is commonly used to make cheese. However, rennet is obtained through the killing of calves since it grows in their stomachs.

The Eggplant Parmesan is both microwavable and oven-cookable. I used the microwave to cook my package. Microwave instructions were written for a 1000 watt microwave oven. Instructions were to poke holes into the plastic seal wrap and microwave for 5 ½ minutes to 6 minutes or until hot. Let stand for 2 minutes before serving. Although I have a 1000 watt oven, it took 8 minutes to get the Eggplant Parmesan hot all through.

My biggest complaint about the packaging and the cooking instructions were that although there is two servings in the package, both servings are placed in a single tray to be cooked together. This is a bit of a damper because I hate to waste, and I also don't like to rewarm microwaved food.

The smell was enticing. It smelled like lasagna being fresh oven baked. My pessimistic husband even tried a bite of the Eggplant Parmesan after the pleasant smell quietly assaulted him. He complimented the taste of the sauce and the cheese, but doesn't like the taste of eggplant.

The taste was unexpectedly robust and home cooked. The sauce and cheese was so delicious that it seemed fattening despite the fact that each serving has only 8 grams of fat. The eggplant skin was a nice dark color and each slice was medium thickness. The pungent flavor of eggplant is a great companion to the roasted vegetables and sundried tomato sauce.

Cedarlane Eggplant Parmesan can be found in the Natural Foods section at Kroger. The Cedarlane Eggplant Parmesan is all natural and has no trans fat.

    I had this vegetarian entree and also another brand and liked them both. I was inspired to try making my own :)

    UMM, one of my favorites but made from scratch. I will look for this.
