Cinco de Mayo comes but once a year, so make the most of it with some mouthwatering dishes at some of Charlotte, North Carolinas's finest Mexican restaurants. Here is just a tasty sampling.

1900 Mexican Grill & Tequila Bar

This restaurant vows to satisfy your craving for real Mexican cuisine. For lunch, try the Soup of the Day and the Grilled Chicken Salad. Whether you're with family, friends or co-workers you'll find plenty on the dinner menu as well, such as Tamal, pork or chicken wrapped in steamed seasoned cornmeal and served with rice and beans, and a side dish.

Cabo Fish Taco Baha Seagrill

The owners of this restaurant combine coastal Mexican cuisine with healthy California living. Start off slow and easy with black bean and cheddar soup for $3.95. Finish up with a "Big Swell" dish such as Rasta Pasta, a tasty combination of jerk chicken and jumbo shrimp tossed with red and green peppers, squash, zucchini and red onions in a pineapple cream sauce for $13.95. Have a shot of Margaritaville for just four bucks, but if you want to splurge, try the Perfect Wave for $11.

La Paz

La Paz started off as a family restaurant in Charlotte over 30 years ago; it has since expanded into a chain restaurant with locations in Atlanta, Asheville, Texas and Florida.

The Charlotte, North Carolina lunch menu includes a Chorizo Burger for ten bucks. You get half a pound of ground beef flavored with chorizo sausage on a toasted sesame seed bun. Celebrate Cinco de Mayo with "Special Items" from the dinner menu such as Chile Rellenos for 11 bucks, two roasted Anaheim chilies stuffed with Monterey Jack cheese, beer batter fried and topped with spicy tomato salsa. Served with Mexican rice and black beans.

For lunch, how about a Speedy Gonzalez, which consists of one taco, one enchilada and choice of beans or rice. If you visit in the evening, chow down on Pollo Tropical, two chicken breasts marinated in a tropical sauce.

Zapata's Cantina

Zapata's offers bottomless chips and salsa, but why not try a Spinach Quesadilla for just $6.40 for lunch? Topped with tomatoes, onions and sour cream and served with white rice and black beans. For dinner, order the tasty Mexican Stir Fry--strips of chicken sautéed with mushrooms, onions, carrots, broccoli, cauliflower and green peppers, all covered with Monterey Jack cheese, all served on a bed of rice.

Drinks include Specialty Margaritas, Cocktails, such as the Tropical Toucan, Tequilas, Beer, and Wine. For dessert sample the Deep Fried Ice Cream. A scoop of vanilla ice cream is coated with a cereal mixture and lightly fried. Served in a flour tortilla shell with honey, cinnamon and fresh-whipped cream.
