Cookie Recipes for Those that Love Cookies
Quick Chocolate Oatmeal Cookies (AKA The Gooey Chewy Monsters)
My kids nicknamed it the Gooey Chewy Monsters because these cookies are just that, gooey, and chewy. The entire family loves them and even though I make two whole cookie sheets worth its never enough.
2 cups Sugar
4 tbsp Cocoa
1/2 cup Milk
1/2 cup Butter
1 tsp Vanilla
2 1/2 Cups Oatmeal Oats
3/4 cup Peanut Butter (Optional)
Combine the Sugar, Cocoa, Milk, and Butter over medium heat, bringing to a boil while stirring constantly. Once the mixture thickens add the vanilla and stir before removing the mixture from the heat.
Add the Oats and Peanut Butter (If you chose to use it). If you do not use the Peanut Butter add 3/4 to 1 cup of oats. I use 1 cup because the kids really like the ooey gooey chewy monsters.
Spoon out and drop onto wax paper and allow to sit for 2 hours. I sometimes put them in the refrigerator to make the processes go a little faster.
What no oven? Nope, no oven. These cookies are very easy to make, no oven required, and kids love them. I will warn you, if you make them gooey, and chewy they will be messy.
Healthy Peanut Butter Cookies
I try to limit my daughters sweets. I do not allow her any candy and have completely removed soda from the list of things she can consume. I do my best to limit the amount of sugar she consumes because of the heavy damage that it had done to her teeth. Despite brushing everyday, the sugar that she was consuming really harmed her teeth and she had to have dental surgery done to put her teeth back in order. I like recipes that do not require sugar or that are healthy. I know there are a lot of parents out there that do as well. With all of that said, here is my Healthy Peanut Butter Cookie Recipe.
1/3 cup Apple Juice
1/2 cup dates
2 Bananas
1/2 cup Peanut Butter
1 cup Whole Wheat Flour
1/3 cup Fine Millet Flour
2 tbsp Soy Flour
Mix the Apple Juice, Dates, and peeled Banana's in a blender.
Remove from blender and place in bowl and cream together with peanut butter. Add all three kinds of flour and mix throughly.
Form into cookies and bake on cookie sheet at 350 degrees F for 10 to 15 minutes.
Easy Peanut Butter Cookies
I love very simple recipes. I am a mother and a homemaker and despite being home all the time, my time is limited. My daughter keeps me extremely busy and I simple do not have the time to be making cookies or cakes that take me a long time to make. So with that said, here is my Easy Peanut Butter Cookie Recipe.
1 (14 oz) can of Sweetened Condensed Milk (Not Evaporated Milk)
1 cup Peanut Butter
1 Egg
1 tsp Vanilla
2 cups Biscuit Baking Mix
Granulated Sugar
Preheat oven to 350 degrees F.
In large mixing bowl, beat condensed milk, peanut butter, egg, and vanilla until smooth. Add biscuit mix; mixing well.
Chill for 1 hour.
Shape into 1-inch balls. Roll in Sugar. Place 2 inches apart on ungreased cookie sheet and then flatten with a fork. Bake 6 to 8 minutes or until lightly browned.
Note
Do not over-bake, like I sometimes do. I forget about them, get distracted and before I know it I have cooked them too long. Good thing this recipe makes roughly 5 dozen.
