Celery with Imitation Crabmeat Salad

1 bunch celery washed and chopped into ¼ inch pieces

1 lb. imitation crabmeat

1 10 oz. can black olives - drained

1 cup shredded cheddar cheese

4 tbsp. olive oil

2 tbsp. lemon juice

1 tsp. parsley (dried or fresh)

Salt and pepper to taste

1 lemon for garnish

Mix all ingredients in order listed in a large bowl

Whisk olive oil, lemon juice, parsley, salt and pepper - pour into the bowl with all of the ingredients and mix well.

Garnish the top of the salad with fresh lemon wedges.

Serve as main dish or as the salad with another main entrée.

Celery Salad - Greek Style

1 bunch celery washed and diced

2 large tomatoes washed and diced

1 seedless cucumber peeled and diced

1 cup pitted kalamata olives

1 cup feta cheese crumbled

4 tbsp. olive oil

2 tbsp. lemon juice

1tsp. oregano

Salt and pepper to taste

Mix all ingredients in order listed in large bowl

Whisk olive oil, lemon juice, oregano, salt and pepper and pour into bowl with all ingredients and mix well.

Garnish top of salad with the leaves from the stalk of celery, a few of the kalamata olives and crumbled feta cheese.

This salad is a great side dish with any meat, poultry or fish main entrée.
