Momofoku's Cereal Milk Recipe
This unique dairy drink, first developed by pastry chef Christina Tosi, starts out very simply:
*6 cups cornflakes (or cereal of choice)
*7 cups milk
*1/8 teaspoon salt
*1/4 cup light-brown sugar (this can be reduced or eliminated if using presweetened cereal)
1.) Preheat oven to 250 degrees.
2.) Place cereal in a single layer on a rimmed baking sheet and transfer to oven. Toast until browned.
3.) Transfer cereal to a wire rack to cool completely.
4.) Place milk in a large airtight container. Add toasted cereal and cover container. Refrigerate for 15 minutes.
5.) Strain milk mixture through a fine mesh strainer or layered cheesecloth into a large container with a pourable spout. Discard any remaining solids.
6.) Add salt and sugar to milk; using an immersion blender, blend until salt and sugar have dissolved.
Pour cereal milk into a clean glass milk jug or pitcher and refrigerate. Serve chilled.
Recipe can be scaled down according to the number of servings desired.

This recipe is not limited to the seemingly bland cornflakes. Christina Tosi, pastry chef at the Momofoku Milk Bar, has thrown in cereals like Captain Crunch and Fruit Loops for a unique twist on her Cereal Milk concoctions.
