Charlotte's Favorite Recipes: Fajitas

Fajitas are hugely popular in Charlotte mainly due to the number of high-quality restaurants that feature them on the menu. Fajitas are a south of the border dish and the recipe usually features grilled steak or chicken.

Some local Charlotte restaurants that are known to specialize in fajitas include:

If you want to try fajitas on your own you can use the following recipe which has worked well for me in the past.

Fantastic Fajitas

Top these off with your choice of guacamole or sour cream or both.

1 pound flank or round streak cut into thin (1/4 inch) strips
1/2 cup lime juice
1/4 cup white vinegar
1 each red and green bell pepper, cut into long strips
1 large onion, cut into rings
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon salt
12 soft flour tortillas

Preparation:

Mix lime juice, vinegar, black pepper, cayenne and salt in a large bowl. Add steak strips and let marinate for 30 minutes.

Preheat grill. Put a couple of drops of water on each tortilla and wrap all together in aluminum foil. Place on grill, turning once during cooking. Place meat in grilling basket on high heat.

Reduce heat and add bell peppers and onion. Cook until meat is done and peppers are starting to soften. Remove from grill and serve. Serves 4.
