Ingredients
Serves 4
12 oz can tomato paste
36 oz milk
12 oz water
4 oz butter
1 tablespoon sugar
1 tablespoon onion or garlic powder
1 1/2 teaspoons salt
to taste black pepper
Directions for Cheap and Easy Cream of Tomato Soup
1
In a medium sized heavy-bottomed pot, add tomato paste, water and butter. When the tomato paste is added, simply fill the can with water to get the right measurement and get the last of the tomato paste out of the can.2
Heat the mixture over medium-high heat, stirring continually until it begins to boil. Remove from heat and allow to cool slightly.3
Fill the tomato paste can 3 times with milk and add to mixture, stirring until it is completely incorporated. Add all other ingredients and return to a very low heat.4
Heat soup until warmed through but do not boil to avoid curdling of the milk. Taste and adjust salt and other seasonings as desired. Serve with sprinkled Parmesan cheese or dried basil.Tip
Be sure to warm the soup on very low heat slowly after adding milk to prevent curdling. Curdled soup will still taste the same so dress it up with Parmesan cheese and dried basil flakes! Makes 4 generous servings (the equivalent of 2 cans of commercial Cream of Tomato soup).

Ok, to leave out the sugar? (Just don't like sweet tasting stuff...)

Great idea. Thank you.
sounds quick and easy
As (poor) kids in the 50's, we would go into a diner and ask for a cup of hot water (free) and pour some ketchup into it.... that was tomato soup. Sounds gross now, but then it was just fine.
I am going to try this. Never thought about using tomato paste for tomato soup. Great easy recipe.
Sounds good.I'd like to add a can of petite diced tomatoes drained and use this liquid as the water.
