Cheap Healthy Food - How One Chicken Can Feed 10 Adults!

Show me someone who doesn't like chicken. But good chicken has become expensive in the past couple years. So in the spirit of frugality I will show you how to make 10 healthy meals out of one chicken. You don't have to make all these chicken dishes at once if you only have a couple of people to feed.

As you're going to stretch this chicken into 10 meals it is worth getting the best chicken you can afford. Free range or organic chicken is healthier for you as it is lives in a stress-free, clean environment and not fed hormones and antibiotics like caged chickens.

Disassemble the chicken with a sharp knife as follows:

1. Remove the wings

2. Remove the legs

3. Remove the thighs

4. Remove the breast from the breast bone

Freeze any chicken parts that you won't be using immediately. You're now ready to cook!

Chicken Breast

One large double chicken breast can be made into 4 schnitzels. Serve with steamed vegetables, mashed potato and salad. This will feed four adults.

Chicken Carcass and Wings

Chicken carcass and the wings can be made into a chicken soup as follows:

Into a large pot place your chicken carcass and wings. Add two liters of water. Boil and remove scum.

Add 1 whole onion scored with a knife, 1 carrot chopped into 4 pieces, one stalk of celery chopped into 4 pieces, half a small parsnip (optional).

Slow cook for at 2-4 hours (the longer the more nutritious the chicken soup will be). Turn off.

Discard the onion, celery and parsnip. Take out the chicken carcass and wings. Take all the meat off and put back into the soup. Discard all the chicken bones. Salt the soup to taste. In a separate pot cook 500g pack of angel-hair pasta.

Divide pasta equally into 4 bowls. Add soup with the meat and the carrot. Chop up some parsley and add to each bowl. This amount of chicken soup will feed another four adults.

Chicken Legs and Thighs

The two chicken legs and thighs can be oven roasted or made into a chicken curry. Served with rice and salad this will feed another two adults.

There you have it one chicken, 10 healthy meals. Bon appetite!
