Cheap Homemade Vegetable Beef Soup

I usually do make a lot of soups and stews year round. Mostly I make them from leftover ingredients that are in the refrigerator. However I do like creating my own unique recipes and so far the family and friends have loved them. One thing I love to use is my crock pot, but with the following recipe you can use a regular stove top pot just set at a low setting. So here is my recipe for mouthwatering homemade vegetable beef soup.

You will need 1 lb. of stew beef or inexpensive piece of steak whichever is cheapest. Add to your list one large can of V8 juice, 1 can of beef broth, 1 can of tomato sauce, 2 bags of frozen mixed veggies, 1 large onion, and salt and pepper to taste. I don't use just plain water to soups as I have found that it takes away from the overall flavor.

Cut the stew beef or steak into small strips or cubes, whichever you prefer. Take a skillet and in some olive oil sauté the beef until almost all the pink is gone. Add some salt and pepper while sautéing. After your beef is cooked set it aside.

Cut your onion into eight pieces. I usually cut it in half and then make two cross cuts on each half. Now take all the other ingredients and put them in your crackpot or stove top pot. Mix everything really well and then add your beef. One variation on this recipe that I use is to sometimes add a cup of barley or lentils to the mix. Set your crock pot to low and let it cook for a few hours.

While the soup is cooking you can sit back and relax. You may want to think about adding crackers and bread when it comes time to serve. There is nothing like good warm biscuits to dip in your soup, but that's just me.

In a few hours you will have a quick and easy soup that your family will love with plenty of leftovers for later. If you don't want soup now, you can always freeze it and thaw it out or microwave it later. Soup is always a good stand by to have and this is a great recipe for having unexpected guests over.
