Cheese and Egg Casserole

This is a hand me down recipe from my grandma whom I call Mungy. At the age of three I couldn't say "Grandma" and "Mungy" came out. Funny how nicknames can stick as I am now in my early forties!

My grandma serves this dish with a fruit bowl of watermelon, cantaloupe, strawberries and blueberries. Also, homemade pecan Kringle. Grandma knows best!

Cheese and Egg Casserole

2 cups croutons
2 oz. shredded cheddar cheese
2 oz. shredded swiss cheese
3 cups of milk
1 onion
2 fresh garlic cloves
1 can of mushrooms
bacon, ham or pork sausage (or all three!)
6 slightly beaten eggs
3/4 tsp. mustard
1/4 tsp. onion powder
3/4 tsp. salt
pepper to taste
Tabasco sauce optional

Mix eggs, milk , onion, and seasons. Pour over croutons and cheese in a greased 9 x 13 inch casserole pan. Sprinkle with four to six slices of diced bacon ham, and/or fried pork sausage and mushrooms.

Bake at 350 degrees for 55 to 60 minutes until eggs set.

*At a work party a co-worker had this sauce in a separate bowl to drizzle on top. One can of cream of mushroom soup and one can of cheddar cheese soup. Warm in microwave, stir and serve.

*Another way I have had this is with about one pound of shredded hash browns added before baking.

    Six diced sausages. You can test it to your liking. I am not a huge meat eater ...I did like all 3 meats in it back when I could eat it! Ham was my favorite though.
