Cheese Dip

'¼ lb blue cheese

3 oz cream cheese

'¼ cup sour cream

2 tablespoon pineapple juice

2 teaspoon Worcestershire sauce

1 drop Tabasco sauce

1 slice onion

This is easy. Put it all in a blender and blend until mixed well. Makes about 1 '½ cups of dip.

Swiss Cheese Pancakes

1 '½ cup Swiss cheese, grated

'¾ sour cream

3 egg yolks

3 tablespoon flour

'¾ teaspoon salt

'½ teaspoon dry mustard

2 tablespoons butter

Mix the first three ingredients and then add the rest slowly. Melt butter in skillet and drop by teaspoonful in skillet. Cook until browned. Turn and cook until brown on the other side and serve. Best with bacon or sausage.

Cheese Soup

2 stalks celery

'½ cup carrots, diced

1/3 cup onion, diced

6 tablespoons butter

2 beef bouillon

2 tablespoons hot water

10 oz cheese, cheddar

1 quart milk

'¼ cup flour

1 teaspoon salt

2 cups milk

Crumbled cooked bacon

In large saucepan heat up butter and add celery, carrots and onions. Heat on low for 5 minutes and add dissolved bouillon in the 2 tablespoons of hot water. The add cheese and 1 quart of milk. When warm follow with flour and salt. Stirring add 2 cups of milk. Cook another 3 minutes and stir until all is mixed well. Put in bowl and garnish with cooked bacon.

Cheesy Asparagus

3 lbs asparagus

2 cups cheese, shredded

1 cup milk

2 teaspoons flour

6 slices of bread

Butter

Dash of paprika

Break off asparagus and keep the good ends only. Warm cheese on low heat with milk and flour.
Put butter on bread. Arrange asparagus on each slice and spoon sauce over it. Dash with paprika.

Cheesy French Toast

2 eggs

1/3 cup milk

'½ teaspoon salt

8 slices white bread

Mustard

4 slices cheddar cheese

3 tablespoons butter

Mix eggs, milk, salt and mustard in bowl. Dunk bread in mixture. Top with cheese slice and heat in skillet heated with butter. Turn when brown.

Blue Cheese Dressing

4 oz blue cheese

2 tablespoons wine vinegar

1 tablespoon lemon juice

1.2 teaspoon Worcestershire sauce

'½ teaspoon sugar

'½ teaspoon mustard

'½ teaspoon paprika

'¼ teaspoon salt

1/8 teaspoon pepper

2/3 vegetable oil

Crumble blue cheese in a bowl. Add wine vinegar, lemon juice and Worcestershire sauce and blend. Heat in saucepan and mix well. Add sugar, mustard, paprika, salt and pepper. Stir constantly. Add oil and mix until smooth. Refrigerate before using.

Lemon Cheese Pie
1 uncooked pie crust

9 oz cream cheese

2 tablespoon butter

'½ teaspoon vanilla extract

'½ cup sugar

1 egg

2 tablespoons flour

2/3 cup milk

'¼ cup lemon juice

Mix together cream cheese, butter and vanilla extract. Add stirring as mixing sugar, egg, flour, milk and lemon juice. Bake at 325 degrees Fahrenheit for 35 minutes. Chill and serve.


Strawberry Cheese Pie

1 cooked pie crust

1 lbs strawberries, cut in small pieces

3 oz cream cheese

2 teaspoons cornstarch

'¾ cup strawberry syrup

Heat cornstarch and syrup until boiling. Stir in cream cheese and strawberries and blend. Remove and put in cooked crust. Put in refrigerator and serve when set.

Pineapple Cheese Cake

1 cooked pie crust

1 1 2/ cups pineapple, crushed

1 '½ teaspoon vanilla extract

'½ cup sugar

1/8 teaspoon cinnamon

2 eggs

1 cup sour cream

3 tablespoons sugar

Drain pineapple juice and blend with cream cheese and '½ teaspoon vanilla extract. Add sugar, cinnamon and eggs. Bake at 325 degrees Fahrenheit for 30 minutes.

Mix sour cream, 3 tablespoon sugar and 1 teaspoon vanilla extract. Spread on pie and refrigerate until chilled.
