Cheesy Campfire Potatoes

Simply Delicious and Oh So Easy!

I created this dish one time when we were camping. It soon became a standard dish that my husband requested when we were at our camp site. It is very easy to make and there is virtually no clean up! All you need is some potatoes, an onion, some spices and a jar of chili cheese dipping sauce, or even any other kind that you like. (This is the kind you find by the potato chips) You'll also need some aluminum foil and some butter or margarine.

Peel the potatoes and slice them onto a large sheet of heavy duty aluminum foil. You want the foil to be big enough so you can fold it closed and have the potatoes spread pretty flat, not piled in a bug bunch. If you are cooking for several people you can make individual pouches for each person.

Next slice very thin onion slices all over the tops of the potatoes. Use as little or as many as you like depending on your love of onions. Sprinkle on some salt, pepper and garlic powder if you have it. I have also added some dried chives.

Put a few heaping spoons of the chili cheese dip over the top of the potato pile. You can adjust this as to how cheesy you like things. For me, the more the better! Put a few dollops of margarine or pats of butter on top of everything else and then fold the aluminum foil over it and seal the edges to make a flat pouch.

You can cook your cheesy campfire potatoes over the campfire by placing them on a log that is not directly in the flames. If you have a grate that you put over your campfire they will lay nicely on it. Turn the pouches very gently and use a pot holder because the foil will get hot!

We usually had a small charcoal grill that we kept in the camper. This works the best as you can add the potato pouches to the grill while you are cooking hamburgers or hot dogs.

Poke the pouch with a knife or fork to see if the potatoes are done. Cooking time will vary, depending on how full your pouches are, or how thick you sliced your potatoes.

You can vary the ingredients too. I have poured salsa over the potatoes in place of the chili cheese. I have even used a little of both. The best thing is that you can eat your chili cheese campfire potatoes right out of the foil pouch and then toss the foil into the trash!
