Cheesy Chicken Tortellini Bake

CHEESY CHICKEN TORTELLINI BAKE

Ingredients that you will need are:
2 cloves fresh garlic and a few dashes of garlic powder
1/2 cup chopped green onion
1 tsp olive oil
1 package cheese tortellini
1 (16oz) jar white Alfredo sauce (do not substitute refrigerated Alfredo sauce)
1 1/2 cups cubed cooked chicken (~ 1 pound)
1 cup milk
1 cup water
1/4 tsp ground black pepper
1 tsp dried basil leaves
1/4 cup grated Parmesan cheese
2 Tablespoons butter or margarine, melted
1 cup bread crumbs

Cube and boil your chicken until it's cooked through.
Preheat oven to 400 F. In a 4 quart saucepan, heat oil over medium-high heat, then add onion and garlic pressed with garlic press. Cook and stir two to three minutes or until onion is tender. Stir in Alfredo sauce, uncooked tortellini, chicken, milk, water, and black pepper. Heat until mixture just comes to a boil; remove from heat. Stir basil into pasta mixture.
Meanwhile, for crumb topping, combine Parmesan cheese, bread crumbs and butter; mix well.
Spoon pasta mixture into a 9x9 square pan; sprinkle with crumb topping. Bake twenty minutes or until edges are bubbly and topping is golden brown.
If you like a little more spice, sprinkle crushed red pepper over your serving. We did this last night and it just added that little bit of extra!! I also like to add a couple dashes of garlic powder on top too.

Yield: 6 servings

Make a fresh salad and some bread sticks and you will have the most delicious and yummy meal EVER!!!!!!

Note: I was worried because it seemed a bit runny/saucy as I was dishing it up, but it was PERFECT, as it sits it gets firmer. So you might want to let it stand for five minutes after cooking.

This dish is a nice addition to your menu. It takes a little bit to prepare but it is so worth it. I have made it on many occasions for my family and friends, and I've yet to hear one complaint. It is a crowd pleaser! The kids will even like it. It tastes like something you would find at a nice Italian restaurant. Its fairly inexpensive to make and usually there is leftover the next day for lunch.

Pairs wonderfully with a nice glass of wine. So relax and have a wonderful night with good food and good company.
