What You Need:
A Crockpot big enough to fill enough potatoes for your whole dinner party. 4 quart Crockpot full will feed about 15 people.
To save time purchase sliced canned potatoes. 12 cans will fill a 4 quart Crockpot.
A large block of Velvetta Cheese.
Pam (or some other cooking spray).
Plan on starting the potatoes about 4-5 hours or so before you plan to eat. If you plan on having a Thanksgiving lunch, starting the potatoes when you wake up works perfectly.
Remember to spray the the Crockpot with Pam, this makes clean up easy and makes it so the cheese and potatoes do not burn.
Drain the cans of potatoes and put them in the Crockpot. The Crockpot setting should be on high.
Now it is Cheese time! Slice your Velvetta about half and inch thick and put a layer of cheese on top of your potatoes. You won't use the whole block, yet.
Your potatoes must now sit for awhile. In about an hour stir the potatoes and add another layer of cheese. Keep adding cheese until you feel the potatoes are to your cheesiness liking.
Once all the desired amount of cheese is melted you can turn the Crockpot down to its low or warm setting.
The potatoes are ready to serve!
At our house we have Thanksgiving lunch, but we leave the potatoes in the Crockpot on warm until after dinner. They are big hit and everyone wants to just keep eating them!
Get creative with your potatoes! If you like onions, cut up some onions to put in it! If you are meat lovers add some bacon bits after the cheese is all melted and serve with sour cream on the side for Loaded Cheesy Potatoes.
When it comes time to clean up, put any extra potatoes (if you have any) in a tupperware container. (Left over potatoes are delicious for breakfast with eggs and bacon. They can also serve cold and taste like a cheesy potato salad.) Most Crockpots can be put into the dishwasher.
