Ingredients

Serves 4
5 eggs
1 1/2 cup milk
1/2 cup steamed asparagus or brocolli, chopped
1/2 cup colby jack cheese, shredded
1 tsp basil
1 tsp rosemary
to taste salt and pepper
to taste bacon, crumbled
1 tsp butter

Break eggs into a bowl. Discard shells

add milk, spices and whisk until completely mixed

stir in veggies and meat, then immediately pour into warmed pan. Do not allow mixture to settle as you may end up with veggies and meat on the bottom. This is especially true if you are cooking other dishes along with your eggs.

cook over medium to low heat (depending how quickly you'd like your eggs to cook). Stir frequently. The higher your heat, the more often you will need to stir.

As the mixture begins to thicken, add all of the cheese and continue stirring until desired level of dryness in eggs.
Tip
substitute skim or lower fat milk and cheese to control the fat/calorie content.This is also delicious with chopped red pepper, onions and mushrooms, ham or sausage.
