"Stuffed Lemon Chicken"

Here's a chicken breast recipe that's a little different and delicious. We are going to open the chicken breast up and stuff it with mushrooms red onions and pepper jack cheese. This is a great chicken breast recipe.

Items

0 calorie spray 1 can with at least a couple sprays of

1 Zip lock bag

2 frying pans

Ingredients:

Pepper Jack Cheese (grate half a cup)

Chicken breast 1 peace

Butter (2 table spoons)

Mushrooms about three

Onions two thin

Limon juice enough to submerge chicken in zip lock bag.

Garlic salt

Pepper

Defrost the chicken

3 mushrooms cut up small

2 full slices of a red onion cut each down the middle leaving 4 long sections of onions.

In a zip lock bag Marinade Chicken breasts lemon juice pepper and garlic salt.

Grate about half a cup of pepper jack cheese.

In a separate pan heat on medium high.

Add chicken and marinade.

Heat to a boil and cover.

Cook for 10 minutes and turn and cook for an additional 10minutes

At this time start the mushrooms onions:

Warm frying pan on medium high heat.

Once pan is warm spread 2 table spoons of butter in the pan.

Add red onions and mushrooms.

While that's cooking lets get back to the chicken.

Strain the chicken

Spray pan with no calorie spray just enough to thinly cover the bottom of pan.

Cook chicken to a nice golden brown.

Once the chicken has achieved its desired color remove chicken to a plate.

The mushrooms and onions should be nice brown and soft.

Slit chicken down the middle going deep but not quite severing it.

The chicken should be opened up like a sandwich

Now take the mushrooms, red onions and pepper jack cheese and stuff the chicken.
