Here is an easy recipe for Chicken Francaise.
4 chicken breasts
Batter
4 eggs
1/4 cup light cream
1 lemon squeezed
1/4 cup white wine
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon minced garlic
1 tablespoon parsley
1/4 cup grated parmesan cheese
Sauce
1/4 cup butter
1/4 cup wine
1/4 cup lemon juice
Pound chicken breasts to flatten. Cover chicken with flour and dip into mixed Batter. Coat a skillet with a mixture of olive oil and butter. Cook both sides of chicken over medium heat till golden brown. Remove chicken and drain off fat. Mix Sauce ingredients in skillet and stir over medium heat. Return chicken pieces and spoon on sauce. Cook for another 2 minutes and serve.
