4-6 Chicken Breasts (thawed)
1 package of Penne Pasta
8 oz of Cream Cheese
4 cups of Milk
1 cup of Chives (chopped)
3 tblsp of Garlic (crushed)
1 tblsp Margarine
1 package Poultry seasoning mix
Extra Virgin Olive Oil
Preparation:
Chicken
Pan sear Chicken breasts over medium heat with Extra Virgin Olive oil, seasoned with Poultry seasoning mix.
Penne Pasta
Cook pasta according to instructions on package. Add 3 tblsp of Olive oil to water with a pinch of salt and pepper to taste.
Cream Cheese Sauce
Pour 4 cups of Milk into a bowl, stir in 1 cup of Chives. Mix in Garlic and Margarine. Pour mixture into a medium saucepan and place saucepan on stove. Use medium heat setting and slowly mix in 8 oz of Cream Cheese with wire whisk.
Bring sauce to a simmering bowl (or until thickened) and season lightly with black pepper.
Place Penne Pasta in a serving bowl, place the Chicken Breasts in the center of pasta and pour Cream Cheese sauce liberally over Chicken and Pasta. Garnish with parsley and chives.
Serve with White Wine (preferably Cabernet Sauvignon Blanc or Chardonnay)
