Chicken and Potato Salad

These are two of my favorite sides at any holiday meal. They can also be used with regular meals. Chicken salad is a great appetizer served with almost any type of crackers. Please read the entire recipe before you start.

Chicken Salad

Ingredients

Chicken - I recommend a medium size pack of leg quarters

1 jar of Salad Cubes

8 eggs

2 tsp nutmeg

2 cups chopped onions one finely chopped and one regularly

½ cup of finely diced celery

¼ cup of sugar

2 cups of mayonnaise

Instructions

The first thing that you should do is separate the thigh from the leg with a large knife then clean your meat. Place your chicken in a large pot and add just enough water so it covers the chicken add one cup of onions and boil until chicken falls off bone about 1 hour. In another pot boil your eggs. While the chicken is boiling you can be dicing your onions and celery and preparing your other ingredients. Once the chicken is done take all the meat off of the bones and put it into a large bowl. Chop it up then add your last cup of onions, celery, mayonnaise, sugar, and eggs. Mix it all together then start with ½ cup of the salad cubes then add more as needed. Add the nutmeg slowly. Nutmeg is my secret ingredient but you don't have to use it. Be creative, add your own ingredients. I like to serve this cold too but some people like to warm it. Try it both ways if you want. Enjoy!

Potato Salad

Ingredients

1 jar of salad cubes

1 5 pound bag of potatoes

2 cups diced celery

3 cups mayonnaise

1 cup mustard

1 cup of sugar

1 tsp salt

2 cups finely diced onions


Instructions

Rinse potatoes and put them in a large pot and boil them with the skin on until you can stick a fork all the way through it then dump them in large bowl and fill it with cold water. After the potatoes cool peel them and put them in a large dry bowl then mash them using a masher or a large fork.

Now add your mayonnaise and mix well with masher. Now you can add your salad cubes, celery, onions, mustard, salt, and sugar. Mix well also you can add more or less mayonnaise and other ingredients until you get it the way you like it. Enjoy! This is best served cold.
