This is a great quick and easy chicken recipe meal to make for dinner. The chicken in the recipe turns out to be extremely tender enough that you can shred it with a fork before serving. Put the thawed chicken breasts in the crock-pot before work or heading out for the day and it will be ready when you get home. It requires little preparation besides chopping all of the toppings. Everyone is sure to enjoy! Chicken Salsa Soft Tacos is definitely a family favorite. This is also a great recipe for company.

Chicken Salsa Soft Tacos

You will need:

Crock-pot or Slow Cooker
4-6 Chicken Breasts, thawed and trimmed
1 large jar salsa, mild (or medium if you like it spicy!)
8-12 soft flour tortillas
cheddar cheese, shredded, 8 oz package
lettuce, shredded or chopped, half of head
1 tomato, diced
1 white onion, chopped
1/2 bunch cilantro, chopped
1 can black beans, rinsed and drained
sour cream, 8 oz container
salsa, 1 jar for topping
guacamole or sliced avocado

Directions:

Place 2 tablespoons of salsa in the bottom of your crock-pot.
Arrange the chicken breasts on top and then pour the rest of the jar of salsa over the chicken.
Cook on low for 8-10 hours.
When finished, use two forks to shred the chicken.
Serve the chicken salsa with tortillas and all of the taco toppings.

Recipe Variation:

Chicken Salsa

Add one cup of chicken broth, one can of drained corn, and 1 can of drained and rinsed black beans with the chicken breasts and jar of salsa. Cook in the crock-pot 8-10 hours. When finished serve over hot white rice. This is absolutely delicious!
